The Big Fella – Cheeky Indulgent Cheese & Potato Pasty

- 230g Maris Piper Potato (Skin on and small dice)
- 170g Onions (Small dice)
- 100g Cheeky Cow Half Fat Cheese (grated)
- 20g Parsley Chopped
- 2 pinches Black Ground Pepper
- 280g Pastry short-crust, ready to roll
- 10g Egg Wash
|1||Pre-prepare and weigh out all the ingredients. Well wash the potatoes. Pre heat an oven to 180ºC (350ºF) Gas 4.|
|2||Combine the potato, cheese, onion, parsley and seasoning in a bowl.|
|3||Roll out thinly, 4 x 23cm/9 inch circles from the pastry.|
|4||Divide the cheese, potato and onion mixture equally among the centres of six of the pastry circles, leaving a clean edge around each circle.|
|5||Egg wash half the pastry edges and pull up carefully to a sub shape, crimp and seal the edges and brush all over with egg wash.|
|6||Place onto a greased baking sheet and transfer to the oven to bake for 20 minutes until golden-brown and thoroughly cooked.|
Baking tray, rolling pin, 9" (23cm) round cutter, pastry brush, small basin.

Serve with plenty of ketchup.

Potatoes can be pre-cooked but you lose flavour and starch through boiling. This recipe is equally as good with puff pastry but has a few more calories.
