Ingredients

  • 230g Maris Piper Potato (Skin on and small dice)
  • 170g Onions (Small dice)
  • 100g Cheeky Cow Half Fat Cheese (grated)
  • 20g Parsley Chopped
  • 2 pinches Black Ground Pepper
  • 280g Pastry short-crust, ready to roll
  • 10g Egg Wash

Directions

Advanced Prep
1 Pre-prepare and weigh out all the ingredients. Well wash the potatoes. Pre heat an oven to 180ºC (350ºF) Gas 4.
Method
2 Combine the potato, cheese, onion, parsley and seasoning in a bowl.
3 Roll out thinly, 4 x 23cm/9 inch circles from the pastry.
4 Divide the cheese, potato and onion mixture equally among the centres of six of the pastry circles, leaving a clean edge around each circle.
5 Egg wash half the pastry edges and pull up carefully to a sub shape, crimp and seal the edges and brush all over with egg wash.
6 Place onto a greased baking sheet and transfer to the oven to bake for 20 minutes until golden-brown and thoroughly cooked.

Equipment:
Baking tray, rolling pin, 9" (23cm) round cutter, pastry brush, small basin.

Cheeky Service Hint:
Serve with plenty of ketchup.

Cheeky Handy Hint:
Potatoes can be pre-cooked but you lose flavour and starch through boiling. This recipe is equally as good with puff pastry but has a few more calories.
