Ingredients

Toastie

  • 1 tablespoon Buttery spread reduced fat
  • 4 Small Tomatoes (sliced)
  • 100g Cheeky Cow Half Fat Mature Cheese sliced
  • 80g Onion red sliced
  • 1 tablespoon Pickle
  • 1 tablespoon Mint Chopped

Crispy Green Salad

  • 320g Lettuce iceberg loose leaf or shredded
  • 4 tablespoons Peppers green de-seeded and sliced
  • 8 Spring Onions

Directions

Advanced Prep
1 Well wash and prepare the salad and vegetable items.
Toastie
2 Lay out and evenly spread one side of the bread slices with the reduced fat spread.
3 Top four of the un-spread sides with the sliced tomato, cheese, onion and pickle. Sprinkle over the mint and cover with the second slices of bread, spread side up.
4 Place on the pre-heated sandwich toaster, top lid down and cook until the bread is crunchy golden brown and cheese has melted.
5 Remove, cut diagonally in half and arrange on a napkin lined plate.
Crispy Green Salad
6 Place all the salad items in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Serve with 120g (¼) of the salad).

Try adding some thin slices of apple they taste delicious with cheese and mint!

Ingredients

Potato

  • 4 Potatoes Baking (Large)
  • 3 pinches Black pepper
  • 2 pinches Nutmeg
  • 100g Cheeky Cow Half Fat Mature Cheese grated

  • 20g Fresh Bread Crumbs

Potato (Optional)

  • 25g Buttery reduced fat spread melted

Crispy Green Salad

  • 320g Lettuce iceberg shredded
  • 80g Pepper green (capsicum) de-seeded
  • 8 Spring onions sliced
  • 4 tablespoons Mayonnaise light

Directions

Advanced Prep
1 Wash well the potato and salad items. Pre heat an oven to 180ºC (350ºF) gas 4 and bake the potato for up to 1½ hrs or until thoroughly cooked. Pre-heat a grill to finish the potatoes.
Baked Potato
2 Cut the baked potatoes in half, scoop out the potato flesh, leaving a thick skin, place in a basin.
3 Mash well to a smooth mix, season with the pepper and nutmeg, mix in three quarters of the cheese, all the chives and half of the parsley.
4 Spoon the mashed potato mix back into the jackets.
5 Mix the breadcrumbs with the remaining parsley and cheese, lightly cover and sprinkle over the potato halves, cover with a little melted spread. Place on a baking tray and brown under a hot grill or in the pre-heated oven and serve.
Crispy Green Salad
6 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with cling film and refrigerate until required for use.

  • 3 Medium Eggs (Beaten)

Directions

Method
1 Carefully break the eggs into a bowl, add the spring onion, chives, hot water and pepper, Beat well and stir in the grated cheese.
2 Heat a 20cm non-stick frying pan over a high heat.
3 When the pan is hot pour in the egg mix and immediately stir by cooking egg away from the edges, leaving the egg centre of the pan, allowing for runny, uncooked egg to fill the gaps.
4 Keep stirring, occasionally tilting the pan to encourage raw egg to find its way to the pans hot surface.
5 The eggs should thicken within 2-3 minutes giving a beautifully uneven golden surface, with a small amount of runny egg. Carefully fold one side over and transfer the omelette to the plate and garnish with chopped chives.

Directions

Advanced Prep
1 Pre-heat the oven 180oC (350oF) Gas mark 4. Prepare the muffin cases.
Method
2 In a large bowl combine the flour, courgette, onion, cheese, parsley and basil and season with paprika and black pepper.
3 In a mixing jug whisk together the milk, olive oil and egg. Pour this liquid into the flour mix and using a fork combine the ingredients until a thick batter is formed. Stir in the quartered tomatoes.
4 Spoon or pipe even quantities of the mixture into the muffin tins, so they are ¾ full.
5 Bake in the preheated oven for 15-20 minutes or until well risen, golden and firm to the touch.

  • 1 tablespoon Olive Oil
  • 160g Onions (Peeled, Halved and Shredded)
  • 6 Medium Eggs (Beaten)

  • 200g New Potatoes (Skin on, boiled and sliced)

Directions

Advanced Prep
1 Advanced Preparation:
Line a 19cm (7 inch) flan/cake tin with baking paper. Pre-heat the oven 180oC (350oF) Gas mark 4. Boil the new potatoes. Pre-heat a baking tray in the middle shelf of the pre-heated oven.
Method
2 Heat the oil olive in a large frying pan to a medium hot heat and sauté the onions for 5 - 6 minutes until soft and caramelised.
3 Whisk together the eggs, grated cheese and parsley. Season with pepper and set aside.
4 Place the onions and potatoes into the prepared tin; pour over the eggs and cheese mixture. Use a fork to ensure ingredients are evenly distributed and level.
5 Place on the preheated tray and bake until golden and puffy and the centre feels firm and springy for approximately 20-25 minutes.
6 Leave to stand for 10 minutes before removing from the tin and carefully peel off the greaseproof paper.
