Cheeky Tomato, Cheese, Onion & Pickle Toastie with Crispy Green Salad

- 1 tablespoon Buttery spread reduced fat
- 4 Small Tomatoes (sliced)
- 100g Cheeky Cow Half Fat Mature Cheese sliced
- 80g Onion red sliced
- 1 tablespoon Pickle
- 1 tablespoon Mint Chopped
Crispy Green Salad
- 320g Lettuce iceberg loose leaf or shredded
- 4 tablespoons Peppers green de-seeded and sliced
- 8 Spring Onions
|1||Well wash and prepare the salad and vegetable items.|
|2||Lay out and evenly spread one side of the bread slices with the reduced fat spread.|
|3||Top four of the un-spread sides with the sliced tomato, cheese, onion and pickle. Sprinkle over the mint and cover with the second slices of bread, spread side up.|
|4||Place on the pre-heated sandwich toaster, top lid down and cook until the bread is crunchy golden brown and cheese has melted.|
|5||Remove, cut diagonally in half and arrange on a napkin lined plate.|

|6||Place all the salad items in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.|
