  • 4 10” (25cm) Tortilla white floured wrap
  • 1 tablespoon Pickle sweet
  • 30g Iceberg shredded or mixed lettuce
  • 2 tablespoons Coriander Chopped
  • 1 tablespoon Mint Chopped
  • 120g Apples eating skin on, cored, finely chopped or grated
  • 2 tablespoons Lemon juice
  • 2 Large Large tomatoes chopped or sliced
  • 8 Spring onions thinly sliced
  • 1 Heaped tablespoon Cheeky Cow Half Fat Mature Cheese grated
  • 2 pinches Black Pepper


  • 240g Cabbage white, shredded
  • 120g Carrots scrubbed and topped cut into fine matchstick strips
  • 60g Onion shredded
  • 2 pinches Pepper ground black
  • 2 tablespoons (Heaped) Mayonnaise light


Advanced Prep
1 Wash well the vegetables, fruit and salad items before preparation.
2 Lay the wraps on a square of cling film, cover with the pickle, add the lettuce, coriander and mint. Top with the apple and a little lemon juice, the tomatoes, spring onions and grated cheese. Season with a little ground black pepper.
3 Moisten the edge with a little pickle to seal the wrap and using your hands and the cling film roll up the wrap, pinching in the ends to maintain a tight roll. Seal the moistened edge.
4 Tighten and cover with the cling film and refrigerate until ready to serve or cut in half or as appropriate and serve.
5 Place the prepared vegetables in a mixing bowl season with ground black pepper, add the light mayonnaise and mix well. If not using immediately place in a sealed container, label and refrigerate and use within 24 hours.

Cheeky Service Hint:
To serve cut the wrap in half diagonally and serve with 110g (¼) of coleslaw and half a tablespoon of light mayonnaise
