Ingredients

Cheesy balls

  • 320g Pork Mince (Lean)
  • 3 teaspoons Thai Fish Sauce
  • 75g Onions (Finely Chopped)
  • 2 tablespoons Lemon grass finely chopped
  • 2 Garlic Cloves (crushed and chopped)
  • 85g Apples (skin on, finely chopped or grated)
  • 2 teaspoons Lemon Juice
  • 20g Coriander (coarsely chopped)
  • 10g Mint (coarsely chopped)
  • 2 pinches Black Ground Pepper
  • 75g Cheeky Cow Half Fat Cheese (Grated)
  • 2 teaspoons Chilli peppers green finely chopped
  • 75g Breadcrumbs

Cheesy Cider Sauce

  • 20g Flour (Premium Grade)
  • 225ml Vegetable Stock
  • 50ml Cream Single
  • 75g Cheeky Cow Half Fat Cheese Sauce
  • 1 teaspoon English Mustard
  • 3g Sugar
  • 1 pinch Cayenne Pepper

Directions

Advanced Prep
1 Prepare all ingredients as directed. Make up the breadcrumbs. Pre heat an oven to 220ºC (475ºF) gas 7 or a hot grill.
Cheesy Cider Sauce
2 Place the flour in the sauce pan and add a small amount of the stock and whisk to a very smooth paste.
3 Whisk in the remaining stock and cider and bring to the boil, stirring continuously and simmer gently for 30 minutes, stirring occasionally to prevent lumping and sticking to the bottom of the saucepan.
4 Add the grated cheese season with a little English mustard and cayenne pepper and finish by adding the cream.
Cheesy Balls
5 Mix in all the ingredients together in a large bowl and season with the Thai fish sauce and black pepper. Divide the mix into 20 even amounts and lightly shape into balls.
6 Place on the baking dish and roast in the pre-heated oven for 15 minute or place under hot grill, turning occasionally until thoroughly cooked.

Large mixing bowl x 1, cheese grater, spatula, cutting board, kitchen knife, baking tray, saucepan, whisk.

Serve the Cheeky Cheesy Balls with the with the Cheeky Cider Sauce and a portion of steamed or boiled rice.

Chicken, turkey or lamb can be substituted for the pork.
