  • 1 tablespoon Olive Oil
  • 160g Onions (Peeled, Halved and Shredded)
  • 6 Medium Eggs (Beaten)
  • 100g Cheeky Cow Half Fat Mature (Grated)
  • 1 tablespoon Fresh parsley (Chopped)
  • 1 teaspoon Black Pepper (Freshly Grounded)
  • 200g New Potatoes (Skin on, boiled and sliced)


Advanced Prep
1 Advanced Preparation:
Line a 19cm (7 inch) flan/cake tin with baking paper. Pre-heat the oven 180oC (350oF) Gas mark 4. Boil the new potatoes. Pre-heat a baking tray in the middle shelf of the pre-heated oven.
2 Heat the oil olive in a large frying pan to a medium hot heat and sauté the onions for 5 - 6 minutes until soft and caramelised.
3 Whisk together the eggs, grated cheese and parsley. Season with pepper and set aside.
4 Place the onions and potatoes into the prepared tin; pour over the eggs and cheese mixture. Use a fork to ensure ingredients are evenly distributed and level.
5 Place on the preheated tray and bake until golden and puffy and the centre feels firm and springy for approximately 20-25 minutes.
6 Leave to stand for 10 minutes before removing from the tin and carefully peel off the greaseproof paper.
