  • 100g Red Onions (Chopped)
  • 2 tablespoons Fresh Coriander (Chopped)
  • 1/2 teaspoon Red Chilli (Finely Chopped)
  • 120g Chopped Tomatoes
  • 100g Kernels Sweetcorn (Canned)
  • 150g Chicken Breast (Cooked and Shredded)
  • 100g Cheeky Cow Half Fat Mature Cheese
  • 4 Tortillas (Floured and Light)
  • 1/2 teaspoon Black Pepper (Freshly Grounded)


Advanced Prep
1 Pre-cook the chicken. Lightly oil and pre-heat a griddle to a medium heat.
2 Combine all the ingredients in a small mixing bowl, except the tortillas, season with pepper and mix well.
3 Lay the tortillas out and divide the mixture equally between them.
4 Spread the mixture over half of each of the tortilla. Fold the tortilla over and cook on the pre-heated griddle until crisp and the cheese starts to melt.
5 Cut into wedges and serve.
