  • 360g Pork shoulder, lean and large dice
  • 200g Apple Cider, Skin on large dices
  • 150g Potatoes skin on Large dice
  • 2 Cloves of Garlic (Crushed and Chopped)
  • 1 tablespoon Chopped Parsley
  • 2 Rosemary Sprigs
  • 2 pinches Black Ground Pepper
  • 250ml Dry Cider
  • 1 tablespoon Gravy Granules
  • 80g Cheeky Cow Half Fat Cheese (Grated)
  • 100g Pastry Short-Crust ready to roll
  • 10g Egg Wash


Advanced Prep
1 Pre-prepare and weigh out all the ingredients. Well wash the potatoes. Pre heat an oven to 200ºC (400ºF) Gas 6.
2 Place the prepared pork in the sauce pan with the garlic, parsley and rosemary and pepper. Cover with the cider. Bring to the boil, cover and simmer slowly for 1 hour or until the pork is very tender. If necessary top with a little cider or water.
3 When cooked thicken lightly with the gravy granules, add the apples and potatoes, pour into the pie dish and sprinkle with the grated cheese.
The Pie
4 Roll out the pastry thinly and slightly larger than the pie dish, trim some edging from the pastry and seal around the edge of the moistened pie dish rim.
5 Place the pastry over the dish, seal and crimp and make a small air incision in the centre. Eggs wash well.
6 Place in the pre-heated oven and bake for 45 minute to one hour or until the pastry has risen and is flaky and golden brown.

Serve with steamed vegetables.

The pastry can be baked off separately as a whole or in four even portions in the prepared oven to give a more dry and crispy texture all over.
