Ingredients

Burgers

  • 1 Onion large finely chopped
  • 1 Garlic clove crushed and chopped
  • 450g Pork minced, lean
  • 75g Cheeky Cow Half Fat Mature Cheese grated
  • 2 tablespoons Apple eating, skin on grated
  • 2 tablespoons Coriander chopped
  • 1 tablespoon Mint chopped
  • 2 pinches of Pepper black ground
  • 1 Apple medium eating, skin on, cored and sliced into 4
  • 4 50g Wholemeal buns

Crispy Green Salad

  • 320g Lettuce iceberg shredded
  • 80g Pepper green (capsicum) de-seeded
  • 8 Spring onions sliced
  • 4 Tbsp Mayonnaise light

Well wash the apples. Pre-heat a grill.
Pork & Apple Burger

Heat a small non-stick frying pan until moderately hot and cook the onion and garlic, stirring continuously, until it starts to soften and cook in its own natural juices and starts to colour. Set aside and allow to cool.

Place the pork mince into a bowl, add the cooked onion, grated cheese, grated apple, coriander, mint and black pepper, mix well together and evenly divide into four moulded balls.

Take the four slices of apple and mould the mince around each slice, burger shaped, leaving the top of the apple exposed.
5 Place on a grill tray covered in foil, place under the pre-heated grill and cook, the burgers, for 15 minutes, or until thoroughly cooked, turning half way through.

Split the wholemeal rolls and toast.
Crispy Green Salad
7 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Cheeky Service Hint:
Serve each Cheeky apple burger with a medium to small toasted or non-toasted burger bun, 120g (¼) of the crispy green salad and a level tbsp of light mayonnaise.

If not for immediate use rub the apple surface with lemon juice, lightly wrap the burgers in cling film, place in a suitable lidded container, refrigerate and use within 24 hours.

Advanced Prep
1 Prepare all ingredients as directed. Make up the breadcrumbs. Wash well the salad items. Pre heat an oven to 190ºC (375ºF) gas 5
Cheesy Balls
2 Place the mince, cheese, basil and ground black pepper in a mixing bowl
3 Heat a non-stick frying pan over a moderate heat and cook the onion and garlic for 3-4 minutes until they start to cook in their own juices and start to brown lightly.
4 Add half the onions to the mix and shape into 16 even sized balls and place into an oven proof gratin/baking dish
5 Mix the chopped tomatoes, ketchup, parsley and remaining onion together and spoon/pour over the pork balls.
6 Mix together the grated cheese and breadcrumbs, top over the meat balls and bake in the pre-heated oven for 30 minutes or until the topping is golden and the meat balls are thoroughly cooked
Crispy green salad
7 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Ragu

  • 400g Pork minced and lean
  • 3 Rashers lean bacon chopped
  • 100g Onions red, finely chopped

  • 2 pinches of pepper black

Crispy Green Salad

Directions

Advanced Prep
1 Wash well all the vegetables and salad. Cook off the pasta in simmering unsalted water for 15-18 minutes or until cooked to requirement and allow 50g raw per person. Drain and keep hot.
Ragu
2 Place the minced pork, bacon onion and garlic in a non-stick saucepan over a low heat and cook until the juices of the pork start to leak and at that point increase the heat and cook for 4-6 minutes or until the meat browns.
3 Add the carrot and courgette and cook for 1-2 minutes, season with the ground black pepper, add the tomatoes and puree, bring to the boil and simmer for 25 minutes or until thoroughly cooked and tender.
Crispy green salad
4 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Directions

Advanced Prep
1 Prepare ingredients as directed. Pre heat an electric grill pan or a hot grill.
Method
2 Place all the burger ingredients, herbs and peppers into a large bowl and bind with the egg.
3 Divide the mix into 4 even portions and form into burgers using the cutters and flattening with your hand and cling film or kitchen paper discs. Place on a suitable tray, wrap with cling film and refrigerate until required for use.
4 Place on the pre-heated grill and cook for 3-4 minute on each side.
5 Remove and serve.

1 Pre-prepare and weigh out all the ingredients. Well wash the potatoes. Pre heat an oven to 180ºC (350ºF) Gas 4.
Method
2 Combine the potato, cheese, onion, parsley and seasoning in a bowl.
3 Roll out thinly, 4 x 23cm/9 inch circles from the pastry.
4 Divide the cheese, potato and onion mixture equally among the centres of six of the pastry circles, leaving a clean edge around each circle.
5 Egg wash half the pastry edges and pull up carefully to a sub shape, crimp and seal the edges and brush all over with egg wash.
6 Place onto a greased baking sheet and transfer to the oven to bake for 20 minutes until golden-brown and thoroughly cooked.

1 Prepare all ingredients as directed. Make up the breadcrumbs. Pre heat an oven to 220ºC (475ºF) gas 7 or a hot grill.
Cheesy Cider Sauce
2 Place the flour in the sauce pan and add a small amount of the stock and whisk to a very smooth paste.
3 Whisk in the remaining stock and cider and bring to the boil, stirring continuously and simmer gently for 30 minutes, stirring occasionally to prevent lumping and sticking to the bottom of the saucepan.
4 Add the grated cheese season with a little English mustard and cayenne pepper and finish by adding the cream.
Cheesy Balls
5 Mix in all the ingredients together in a large bowl and season with the Thai fish sauce and black pepper. Divide the mix into 20 even amounts and lightly shape into balls.
6 Place on the baking dish and roast in the pre-heated oven for 15 minute or place under hot grill, turning occasionally until thoroughly cooked.

Directions

Advanced Prep
1 Pre-prepare and weigh out all the ingredients. Well wash the potatoes. Pre heat an oven to 200ºC (400ºF) Gas 6.
Method
2 Place the prepared pork in the sauce pan with the garlic, parsley and rosemary and pepper. Cover with the cider. Bring to the boil, cover and simmer slowly for 1 hour or until the pork is very tender. If necessary top with a little cider or water.
3 When cooked thicken lightly with the gravy granules, add the apples and potatoes, pour into the pie dish and sprinkle with the grated cheese.
The Pie
4 Roll out the pastry thinly and slightly larger than the pie dish, trim some edging from the pastry and seal around the edge of the moistened pie dish rim.
5 Place the pastry over the dish, seal and crimp and make a small air incision in the centre. Eggs wash well.
6 Place in the pre-heated oven and bake for 45 minute to one hour or until the pastry has risen and is flaky and golden brown.

Note

Equipment:

1 Make up the stuffing to a light mix easy to spread. Pre-heat an electric sandwich grill.
Method
2 Lay the wrap on chopping board or clean work surface, cover with lightly made stuffing in the centre, spoon on the cranberry.
3 Top with the turkey, peppers and cheese leaving an edge of 1cm (½"). Moisten the edge with a little water to seal the wrap.
4 Fold the wrap in half, pinching in the ends to maintain a tight seal the moistened edge.
5 Place in the pre-heated grill and grill for 3-4 minutes or until cooked and the cheese is melted.
6 Remove, cut in half and serve.

Advanced Prep
1 Pre prepare the tomato sauce, pasta dough and cheese filling.
Tomato Sauce
2 In a saucepan add the garlic, tomatoes, balsamic vinegar, basil and pepper. Bring to the boil and simmer gently for 3-5 minutes.
3 Allow to cool slightly and puree with an electric hand blitzer or processor - cover and set aside.
Pasta Dough
4 In a basin mix all the pasta ingredients together and turn out onto a clean dry surface and knead until smooth and elastic. Wrap in cling film and refrigerate
Cheese Filling
5 In a small saucepan bring the water, buttery, chilli and cumin to the boil add the flour and mix to a smooth paste until it leaves the sides of the pan clean, remove from the heat and mix in the cheese.
6 When cooled mix in the beaten egg, cover with clingfilm and refrigerate until required for use.
The Ravioli
7 Roll out half the pasta dough, using plenty of flour to a paper thin thickness. Spoon or pipe out small teaspoon portions of cheese filling, allowing space for square or round ravioli of 5cm (1.5").
8 Roll out half the pasta dough, using plenty of flour to a paper thin thickness. Spoon or pipe out small teaspoon portions of cheese filling, allowing space for square or round ravioli of 5cm (1.5").
9 To poach place the ravioli in gently simmering lemon flavoured water and simmer for 3-5 minutes until thoroughly cooked.
10 Remove with a slotted spoon, place either on a plate or gratin dish as required garnished with a little chopped basil and grated cheese (optional).

Ingredients

  • 80g Californian prunes ready to eat and quartered
  • 70ml Cider dry
  • 1 teaspoon Ginger grated
  • 1 teaspoon Oil olive
  • 1 teaspoon Garlic chopped
  • 80g Cheeky Cow Half Fat Mature Cheese
  • 80g Mango ripe, large dice
  • 50g Puy lentils
  • pinch Salt
  • 80g Onions red sliced
  • 80g Spinach baby
  • 5g Basil sprigs
  • 15g Lemon zest
  • 2 tablespoons Lemon juice

Directions

Advanced Prep
1 Soak the prunes in cider, oil, garlic and juice of the lemon overnight. Wash and prepare the salad and vegetable items. Cover the lentils in minimal water, cook gently with the garlic and ginger until just cooked and the liquid has been absorbed into the lentils. Allow to cool.
Method
2 Place the soaked prunes, cheese, mango, lentils, onions, and lemon zest, in a large basin, season
with pinch of salt and mix lightly.
3 Lightly mix in the spinach and basil
4 Serve as required
