Ingredients

Burgers

  • 1 Onion large finely chopped
  • 1 Garlic clove crushed and chopped
  • 450g Pork minced, lean
  • 75g Cheeky Cow Half Fat Mature Cheese grated
  • 2 tablespoons Apple eating, skin on grated
  • 2 tablespoons Coriander chopped
  • 1 tablespoon Mint chopped
  • 2 pinches of Pepper black ground
  • 1 Apple medium eating, skin on, cored and sliced into 4
  • 4 50g Wholemeal buns

Crispy Green Salad

  • 320g Lettuce iceberg shredded
  • 80g Pepper green (capsicum) de-seeded
  • 8 Spring onions sliced
  • 4 Tbsp Mayonnaise light

Well wash the apples. Pre-heat a grill.
Pork & Apple Burger

Heat a small non-stick frying pan until moderately hot and cook the onion and garlic, stirring continuously, until it starts to soften and cook in its own natural juices and starts to colour. Set aside and allow to cool.

Place the pork mince into a bowl, add the cooked onion, grated cheese, grated apple, coriander, mint and black pepper, mix well together and evenly divide into four moulded balls.

Take the four slices of apple and mould the mince around each slice, burger shaped, leaving the top of the apple exposed.
5 Place on a grill tray covered in foil, place under the pre-heated grill and cook, the burgers, for 15 minutes, or until thoroughly cooked, turning half way through.

Split the wholemeal rolls and toast.
Crispy Green Salad
7 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Cheeky Service Hint:
Serve each Cheeky apple burger with a medium to small toasted or non-toasted burger bun, 120g (¼) of the crispy green salad and a level tbsp of light mayonnaise.

Cheeky Handy Hint:
If not for immediate use rub the apple surface with lemon juice, lightly wrap the burgers in cling film, place in a suitable lidded container, refrigerate and use within 24 hours.

Ingredients

  • 450g Pork mince, trimmed and lean
  • 75g Cheeky Cow Half Fat Mature Cheese Grated
  • 2 tablespoons Basil fresh chopped
  • 2 pinches Pepper black ground
  • 160g Onions red, finely chopped
  • 2 cloves Garlic, peeled, crushed and chopped
  • 400g Tomatoes canned, chopped
  • 2 tablespoons Tomato ketchup
  • 1 tablespoon Parsley fresh and chopped
  • 50g Cheeky Cow Half Fat Mature Cheese Grated
  • 25g Breadcrumbs fresh
  • 4 sprigs Basil, roughly torn

Crispy Green Salad

  • 320g Lettuce iceberg shredded
  • 80g Pepper green (capsicum) de-seeded
  • 8 Spring onions sliced
  • 4 Slices Wholemeal bread

Directions

Advanced Prep
1 Prepare all ingredients as directed. Make up the breadcrumbs. Wash well the salad items. Pre heat an oven to 190ºC (375ºF) gas 5
Cheesy Balls
2 Place the mince, cheese, basil and ground black pepper in a mixing bowl
3 Heat a non-stick frying pan over a moderate heat and cook the onion and garlic for 3-4 minutes until they start to cook in their own juices and start to brown lightly.
4 Add half the onions to the mix and shape into 16 even sized balls and place into an oven proof gratin/baking dish
5 Mix the chopped tomatoes, ketchup, parsley and remaining onion together and spoon/pour over the pork balls.
6 Mix together the grated cheese and breadcrumbs, top over the meat balls and bake in the pre-heated oven for 30 minutes or until the topping is golden and the meat balls are thoroughly cooked
Crispy green salad
7 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Serve with 120g (¼) of crispy green salad and a slice of toasted wholemeal bread.

Chicken, turkey or lamb can be substituted for the pork.

Ingredients

Ragu

  • 400g Pork minced and lean
  • 3 Rashers lean bacon chopped
  • 100g Onions red, finely chopped
  • 2 Garlic cloves, crushed and chopped
  • 1 Carrot medium, skin on and chopped
  • 1 Courgette medium sliced
  • 2 pinches of pepper black
  • 400g Tomatoes chopped, canned
  • 2 tablespoons Tomato puree
  • 200g Spaghetti plain
  • 80g Cheeky Cow Half Fat Mature Cheese grated

Crispy Green Salad

  • 320g Lettuce iceberg shredded
  • 80g Pepper green (capsicum) de-seeded
  • 8 Spring onions sliced

Directions

Advanced Prep
1 Wash well all the vegetables and salad. Cook off the pasta in simmering unsalted water for 15-18 minutes or until cooked to requirement and allow 50g raw per person. Drain and keep hot.
Ragu
2 Place the minced pork, bacon onion and garlic in a non-stick saucepan over a low heat and cook until the juices of the pork start to leak and at that point increase the heat and cook for 4-6 minutes or until the meat browns.
3 Add the carrot and courgette and cook for 1-2 minutes, season with the ground black pepper, add the tomatoes and puree, bring to the boil and simmer for 25 minutes or until thoroughly cooked and tender.
Crispy green salad
4 Place all the salad items less the mayonnaise in a mixing bowl and lightly mix with a spoon. Cover with clingfilm and refrigerate until required for use.

Note

Cheeky Service Hint:
Serve garnished with a tablespoon of grated Cheeky Cow Half Fat Mature Cheese, an even (¼) portion of the cooked spaghetti and with 120g (¼) of crispy green salad.

The same recipe can be adapted to spaghetti bolognaise with the addition of two teaspoons of fresh chopped oregano or one teaspoon of dried.
